Sold out! Tonight’s “Taste of Canadian Harvest” 100 Mile Feast features local chefs and foods

The 100 Mile Feast is an initiative to help raise funds for recruiting physicians to Waterloo Region. Organized and implemented by the Greater Kitchener Waterloo Chamber of Commerce, this event, now in its ninth year, feature local chefs preparing courses with wine pairings.

Here’s a run down of the chefs and their courses:




Braised leek and Eby Manor ricotta cannelloni with pepper squash chips, juniper braised beets, pickled honey-cap mushroom, and candied pumpkin seeds paired with a KW Craft Sparkling Cider that is tart, juicy and crisp.  [Chef Jeritt Raney, Executive Chef, Proof Kitchen + Lounge]

Citrus tea-cured Coho salmon with sustainable sturgeon roe, smoked Great Lakes fish fumet and local sorrel paired with 2010 Vineland Estates Winery Semi-Dry Riesling VQA that has delicate floral, citrus and peach aromas. [Chef Dem Neumann, Banquet Chef, Proof Kitchen + Lounge]

Elk osso bucco with roasted marrow bone, concord grapes, mushroom escabeche, herb salad and sweet grass vin paired with 2011 Vineland Estates Winery Cabernet Franc VQA which has black fruit, dried herbs, plum and green pepper; berry and dark chocolate with a long lively finish.  [First Nation Chef Rich Francis, Chef and Founder, The Seventh Fire Modern Indigenous Cuisine and Top Chef Canada, Season 4 Finalist]

Apple walnut galette with whipped crème fraiche and caramel paired with Anderson Craft Ales Autumn Ale which is a smooth, copper-coloured Oktoberfest-style beer finished with German Noble hops for a clean, crisp finish. [Martha Borys, Baker and Pastry Chef, The Lancaster Smokehouse]
