A simple way to punch up the flavours of a fresh green salad? Smokey tomatoes.
As the fresh summer tomatoes come in from the fields, grab a bunch, slice them in half, drizzle with a touch of olive oil, salt and pepper, and smoke them in your smoker or on the barbecue with wet wood chips for anywhere from 10 minutes to 30 minutes, depending on how smokey you want the end result.
With an immersion blender, whiz the smoked tomatoes with the some vinegar, maybe a touch of garlic, a small hit of mustard, and season otherwise to your liking. Adjust with olive oil depending on how you want the consistency. Strain (or not) through a fine-meshed sieve. Dress your salad.
