Jerk Seasoning, circa 1494

On this day in 1494, intrepid explorer Chris Columbus landed in what is now Jamaica and met Arawak Indians.

At that time, he was introduced to a Jamaican pimento — which we call allspice — that the Arawaks were using to season and smoke meat — usually of the porcine nature.Along with term “barbecue,” such seasoning became the essence of what we know as “jerk” flavouring.
