Lovers of Hog Tails Bar-B-Que in Laurelwood, Waterloo, are glad to find that the new Lancaster Smokehouse in Kitchener’s Bridgeport neighbourhood is now open for business. At the helm, chef-owner Chris Corrigan and his staff have built the premier BBQ joint in southwestern Ontario…and maybe the entire province.

Best thing you’ve ever eaten?
My father’s home-made tomato soup. The first time food “wowed” me.

Other career you could have pursued?
Refinishing antique furniture, restoring musical equipment, teaching.

Favourite beverage?
Brio Chinotto.

Beverage that once just about killed you?
Never met one.

Chef you’d most like to meet?
Fergus Henderson [of St. John restaurant, London, UK].

Best footwear (for the kitchen or otherwise)?
Birkenstocks.

Oh, a few Latin American gems here and there.

What scares you in a kitchen?
Someone with poor knife skills.

Greatest failed recipe?
I’ll let you know when it happens.

Something that gives you great pleasure?
My family and backyard cooking.

Chef Rudi Fischbacher, Humber College School of Hospitality, Recreation & Tourism.

Clutch.

Anyone who can appreciate and understand what goes into by job.

More awareness of local talent and products.

My own garden.

The opportunity to always learn.

Most “dumbest” purchase you’ve ever made?
Most of my vehicles over the years.

None! I’m a small town boy.

Most of them.

Would you describe yourself as sweet or savoury?
I have a massive sweet tooth, but I like to cook savoury.
